This simple, homemade Vanilla Caramel Sauce recipe without cream, brown sugar and corn syrup that adds hints of vanilla to make a great topping for fruit, ice cream, and other desserts.
- 2 cups White sugar
- 1.3/4 cups Whole milk (or what you have, higher fat content is ideal for texture)
- 1 Vanilla bean or paste , split lengthwise, or 1 tsp pure vanilla extract if you don’t have a vanilla bean
- 1/2 stick Unsalted butter
- 1/2 tsp Salt
Warm the whole milk a minute and stir to even out the temperature. After that place the warm milk near the stove and a heat-safe spatula or wooden spoon to aid in the melting process.
Boil those sugar mixture continuously until the sugar reaches a color like light brown. When you see the smoke, remove the pan from the heat immediately.
Very slowly add the milk to the caramel and stir to combine with the spatula. It’s important to keep the caramel moving before and during this process because milk will make the caramel bubble and steam up aggressively, so be careful as you stir.
If you see lumps within the sauce at this time, return the pan back on the heat again for one minute, stirring or whisking constantly until smooth.
Add vanilla bean or paste now. Stir it and remove the caramel pan from heat. Cool completely before transferring to a container. Store caramel in a covered container in the refrigerator. It will last for two to three months.
