Personally, I don’t like to use heavy cream in my recipe. You know that I always try my best to avoid heavy cream in most of my recipes. Ingredients

  • 2 cups White sugar
  • 1.3/4 cups Whole milk (or what you have, higher fat content is ideal for texture)
  • 1 Vanilla bean or paste , split lengthwise, or 1 tsp pure vanilla extract if you don’t have a vanilla bean
  • 1/2 stick Unsalted butter
  • 1/2 tsp Salt

Instructions

  1. Warm the whole milk a minute and stir to even out the temperature. After that place the warm milk near the stove and a heat-safe spatula or wooden spoon to aid in the melting process.

  2. In a heavy-bottomed saucepan, place the white sugar or the Sugar Substitute, salt, and unsalted butter and whisk to combine. Boil them over medium-high heat. Stop whisking when these come to a full boil and all the ingredients have dissolved. Reduce the heat to medium-low.

  3. Boil those sugar mixture continuously until the sugar reaches a color like light brown. When you see the smoke, remove the pan from the heat immediately.

  4. Very slowly add the milk to the caramel and stir to combine with the spatula. It’s important to keep the caramel moving before and during this process because milk will make the caramel bubble and steam up aggressively, so be careful as you stir.

  5. If you see lumps within the sauce at this time, return the pan back on the heat again for one minute, stirring or whisking constantly until smooth.

  6. Add vanilla bean or paste now. Stir it and remove the caramel pan from heat. Cool completely before transferring to a container. Store caramel in a covered container in the refrigerator. It will last for two to three months.

Recipe Notes

The best way to clean this deep caramel saucepan is to fill it half with water and boil until the sugar dissolves. After that, dump those water out and again fill with warm water and scrub out the remaining sugar while the pan is still warm. You have to be careful to let the pan cool enough so that you don’t burn your hands on the hot pan that just came off of the stove.
