Chaler Payesh / Chaler Kheer a traditional Bengali dessert. In Bangladesh and India – Chal means rice and Payesh are derived from the Sanskrit word which means milk. This is a rice-based pudding, serves as dessert after Dinner/Lunch or on several occasions such as baby showers, birthdays, house-warming ceremonies. This is one of the testy and easy Bangladeshi dessert recipes. The making of this testy Chaler Payesh is an art that is passed on from generations to generations of the Bengali family.

This dessert is one of the known common sweet which is served during Ramadan and prepared for the feasts of Muslim weddings and festivals – such as Eid ul-Fitr and Eid ul-Adha. This is also called Firni, is eaten in several countries. Nowadays, restaurants provide Firni in a wide range of flavors. This Bangladeshi dessert can be very easily made at home with very few ingredients – rice, sugar, milk and dry fruits.

Chaler Payesh or Chaler Kheer is always made from Gobindo Bhog riceKaljeera rice or Sunned rice. But Basmati Rice also can use and it smells really good in Payesh. The addition of adding milk here, I always like to use coconut milk to this recipe. This Coconut Milk gives a luscious rich flavor, smell, and thick consistency.

Easy Bangladeshi Dessert Recipes

You can use cow milk, milk powder instead of coconut milk if you’re allergic to coconuts. You can add ghee and full cream milk here. In this dessert, rice will blend quite well with these and enhance the overall taste. But I didn’t use these because ghee and full cream contain heavy fat and without them, I managed to make this delicious Bengali dessert. So today, I am sharing this traditional Bengali Chaler Payesh, Chaler Kheer, Rice pudding or whatever you want to call it.

Serve with any dry fruit, stewed or canned fruit you like (pieces or whole) on the top. Serve this as a dessert after your delicious meals.

Coconut Milk is a very good source of high-calorie. It contains lauric acid, antimicrobial lipids and capric acid, which have multiporpose antifungal, antibacterial and antiviral properties. Fatty acids in coconut milk also helps to improve heart health. This milk also is highly nutritious when ingested and these nutrients help fortify and condition skin and hair as well. Also it has lots of Vitamins and Minerals.

Bengali Chaler Payesh or Chaler kheer is a rice-based pudding serves as dessert after Dinner/Lunch or on several occasions such as baby showers, birthdays, house-warming ceremonies. Let's check this traditional recipe with complete instructions.

Ingredients

  • 1/3 cup Gobindobhog / Sunned / Basmati Rice
  • 800 ml Milk / Coconut milk
  • 1 1/3 cups Coconut Ground (if you use coconut milk, then don’t use it)
  • 6 or 8 tbsp (or to taste) Sugar
  • 7 Cardamom
  • 2 crashed Cinnamon
  • 1/5 tbsp Groundnut
  • 2 Bay leaves
  • Salt - to taste
  • Cashew nut and Raisins decorations

Instructions

  1. Wash and soak the rice for 15 minutes. After that drain the water from rice and leave them in a colander so that all the water drains.

  2. In a heavy bottom pan add coconut milk and bring it to boil. While boiling the milk, add bay leaf, Coconut (if you don’t use coconut milk), Cardamom, Cinnamon, Groundnut into it. By adding these in this time will help to spread most of the smells of these ingredients very nicely evenly in the milk.

  3. You can start with high heat. But when milk will start to boil reduce the heat to medium-low.

  4. Add the rice slowly into it. Then add salt. This will help to cook rice quickly. 

  5. Remember to keep stirring the milk continuously. When the rice is almost done, reduce the heat to low.

  6. By a hand grinder, stir the rice and milk very quickly for 3-4 minutes so that rice get crush into very small pieces. After that, you can stir them with the previous spoon.

  7. Now add sugar.

  8. You will have to be super careful and keep on stirring at this stage until the milk reduces to 1/3 of its original volume and is thickened to the right consistency.

  9. When the rice is soft and completely done, Turn off the heat. Let Payesh cool to room temperature and refrigerate for an hour and serve cold.

 

Now your Chaler Payesh or Chaler Kheer is ready. Serve this as a dessert / to a guest / in festivals and garnish it with Cashew nut, Raisins, any dry fruit pieces or whole on the top while serving.

Some people like to eat this cold or some in normal temperature. I personally like this in little bit cold taste with lots of raisins and nuts pieces. A cup of Chaler Payesh or rice pudding is a perfect dessert after a heavy lunch or dinner meal.
