Shredded Chicken:

I saw some use hand mixer or blender to shred the chicken meat. But I find this is unnecessary. You don’t have full control over this blender and mixer. As a result, this may cause over shredding or grinding/crushing the meat.

I prefer to using two forks in hands, shredding the chicken into big chunks. Otherwise, if you like to use hand mixer here are some great hand mixer from Amazon you can check.

You can freeze the leftovers and microwave them for later use (if there is actually any left-over!). This Shredded Chicken Tacos surely become my family favorite. Enjoying great dishes with friends and family on a weeknight.

Instructions

Mixing Taco Seasoning
  1. Add all of the seasonings to a bowl or jar big enough and mix well. Double the ingredients if needed. Keep it sealed in an airtight jar so it stays fresh!

  1. Coat the chicken breasts with the taco seasoning and place them in a deep non-stick saucepan.

  2. Add the chicken broth or Olive oil in the saucepan and add Salt, Chili Powder.

  3. Cover with lid and bring them to cook on medium-low heat for 4-5 minutes or simmer until cooked through.

  4. After that turn off the heat, let the chicken cool. With two forks, shred the chicken meat into bite-size pieces.

  5. Turn on the heat again. Add Grated Cheese / Homemade Tomato Sauce / Sour Cream / Salsa depend on your choice.

  6. Add Chopped tomatoes, Sugar (optional) and Diced Green Chilies. Pour little bit chicken broth if the chicken seems too much dry. Once it’s heated through and all seems ok, turn of the heat. Spoon into in warm taco shells or soft tortillas.

Want to fry the Tacos?
  1. To fry the tacos, heat 1 cup Olive oil in a heavy bottom saucepan over medium-high. Place some chicken in the middle of a soft tortilla, then fold tortilla in half.

  2. Clamp the tortilla shut with a heat-proof metal tong, then carefully place the taco - one side down in the oil. Use the tong to hold the top side down for a few seconds to form it in place. Once it stays put, repeat with other tacos.

  3. Turn tacos after 30 to 45 seconds, or until each side gets light golden brown (not too much brown).

  4. Place the tacos in paper towels to dry out extra oil.

  2. I like adding Sour cream and sugar while cooking and Salad / Fruits / Our homemade tomato sauce as toppings.
  3. If you use freeze meat instead of fresh, add 10 minutes more for cooking.
