When it comes about Fresh Tomato Sauce – if you’re buying canned tomato sauce from store because it’s easier than making the real one, stop there right now! Using poor quality canned tomato sauce can leave an acidic taste in your mouth and can cause acidity in your stomach. Sometimes, grocery store tomato sauces are filled with sodium and even excessive sugar. Why I made Homemade Tomato Sauce?

My lovely mother and father had a great hobby – they both loved to do gardening. Together they did make a vegetable garden on our roof. After my mother died, my father still keeps continuing this hobby. He loves to eat fresh food. He planted lots of tomato

trees in there and every year we get a high amount of tomatoes from those. So I decided to make some fresh food with tomatoes like Tomato sauce, Tomato-Curry Poached Eggs, Tomato soup, Tomato Galette, Tomato pasta salad and so on. I’ll talk about these recipes some other day.

While making this homemade tomato sauce I didn’t use White Vinegar. However, I saw some people using this for keeping sauce long-lasting. I did avoid vinegar here because I tried to use all natural ingredients. But if you want you can use White Vinegar. The best way to make tomato sauce – peel off the tomato skin after boiling, if you cook the tomatoes with skin then you should strain the sauce to get rid of those skin and this is very exhausting.

And if you don’t strain then it’ll irritate your taste and mouth while eating tomato sauce. Otherwise, if you use a blender to blend the tomatoes first with skin, you can do that. But I feel using boiling water is the best to keep the full taste of tomatoes also you can’t fully mash the skin in the blender.

Uses of Fresh Tomato Sauce:

Mmm… Fresh Organic Tomato Sauce! While thinking of this tomato sauce, most people think spaghetti or snacks. But fortunately, tomato sauce goes well beyond our basic thinking. Tomatoes not only taste great, but they’re loaded with antioxidant bioflavonoid which boosts our immune systems. We basically eat this delicious sauce with snacks, noodles, BBQ, grill, any type of fry. But there are more — we’re talking about eggs, chili, meatloaf, chicken parmesan, pizza, pasta and more! Also, a little bit sauce can be mix with some of the cooking if you like Sweet and Sour taste in your food.

Health benefits of Tomatoes:

Tomatoes are our best source of lycopene, a carotenoid and powerful antioxidant which is a bioflavonoid that protects against various cancers. The American Cancer Society has reported from studies on lycopene that individuals with diets rich in tomatoes were found to have a lower risk of many types of cancer, including prostate, lung, and stomach cancer. Lycopene also can reduce the risk of heart disease by 25%. Tomatoes contain a considerable amount of vitamin C, beta-carotene, mineral manganese and vitamin E. The presence of vitamin C is particularly strong in tomatoes. Those who like to cook tomatoes will be happy to know that the cooking process does not eliminate this vitally important nutrient.

In the cosmetics and beauty market, tomatoes have lots of effects they have on the skin. When consumed regularly, the antioxidants in tomatoes appear in as a natural sunscreen. They also work to fight cellular damage, wrinkles, and skin reddening.

Ingredients

  • Water - as require
  • 2 medium size Onion paste
  • 2 Garlic clove
  • 3 (or to taste) Green Chilli -
  • 1 ¾ pound Fresh tomatoes
  • bunch Spinach finely chopped
  • 1 tbsp Brown sugar
  • 2 Bay leaves
  • 4 Cloves
  • 2 Cardamom
  • Black pepper powder to taste
  • Salt - to taste

Instructions

  1. Place the tomatoes in a large bowl with boiling water. Wait for 1 or 2 minutes or until you can see tomato skins begin to peel off (don’t wait for too long as tomatoes will begin to cook). Drain immediately. Peel and discard skin. Remove cores. Finely cut each tomato into small pieces.

  2. In a deep saucepan, take all the ingredients except brown sugar. Now add 4-pounds water into it. Cover them and cook on low-medium heat for 15 minutes. We can add more water later if need.

  3. After 15 minutes check the tomatoes. If those seem like becoming soft and paste but not fully thick paste, remove from heat and allow mixture to cool slightly.

  4. Strain the whole mixture through a fine sieve so that we can separate bay leaves, cloves, cardamom, and tomatoes' small yellow seeds as much as possible. After that return them to the saucepan again and add brown sugar.

  5. Cook them until the thick consistency you want. If consistency is very thick, add little bit more water, cook them again. Remove the saucepan from heat and let it be cool.
